Setouchi Sea Salt Ramen at Sanwa on Hakata Island
Hakata no Shio Ramen Sanwa (伯方の塩ラーメンさんわ) is a shio ramen specialty ramen shop on Hakata island in the Setouchi inland sea. The shop focuses on all the flavors of Hakatajima and the Setouchi inland sea and tries to elevate them through their ramen.
The soup is quite complex and delicate, including a mix of Setouchi seafood. They offer a regular option and one with a more rich flavor, which I recommend going for, to have more impact. The seasoning is mainly Setouchi sea salt and other umami rich components. The noodles are quite thin and match well with the soup. The chashu is a classic pork belly cut, of which I recommend getting some extra. One noteworthy topping is the dried sakura shrimps which give the soup an extra seafood flavor kick. If you have never had them, the flavor can be a bit strong at first. For me, it brings the soup to another level and fits well to the bowl, adding complexity and another layer of flavor.
Another highlight of Sanwa are the rice side dished you can get. The first one is a onigiri filled with seasoned seaweed that just brings some extra taste of the sea to the table. The second one is an inari sushi, fried tofu skin stuffed with rice. The inari at Sanwa is filled with rice that has been seasoned with with soy sauce and is then stuffed with a sweet piece of mandarin orange, creating a balance between salty and sweet that is hard to put down after the first bite. Really good stuff and a must get at Sanwa.
The parents of the shop owner used run salt farms on Hakatajima, which gave the inspiration to focus on shio ramen. These days, there are no salt farms left on Hakatajima, but Setouchi sea salt is still produced in other areas and used for the shio ramen at Sanwa. The shop and idea of Hakata shio ramen was created in 1998. The shop itself relocated to the current location in 2015.

Actually you would be surprised how many tourists make a stop in Onomichi! It’s a real tourist destination.

I'm in Tokyo first week of july 2024 and are choosing between going this one or the Iriya Morning Glory Festival (Asagao Matsuri) between Uguisudani and Iriya Stations on saturday july 6th. If only going to one of them, which one should I choose? I do realise they are fairly close to each other and doable on the same day, but I'm thinking maybe one of them will be enough.

I'm going to say this is one of the best looking bowls I've seen.
That Aedama looks absurd and also completely mandatory- I imagine it's a clever way to get patrons to pay more then they normally would.

They’re still in opening/training phase. You can see the master oversee and make adjustments quite a bit. Cool to see that phase too, usually doesn’t last long in Japan.

I've never been to Sapporo. I was thinking of going there next weekend to get away from the heat and try miso shops..... and then I found out there is no Shinkansen 😢
Well actually you can take the Shinkansen all the way to Hakodate and then an express train called “Hokuto” from there to Sapporo. That’s how I did it recently (with some stops in between).

Harajuku scares the hell out of me. Last time I went there I almost got trampled on Takeshita street. Maybe this shop is reason enough to overcome my fears and go there again.

Another great video :) I spent 2 days in Sendai and I was lucky enough to hit Dashiro, these where the shops I hit, in order of preference: Sendai Kuroku - Shio ramen Dashiro - Clam ramen Menya Togashi - Ebi Tsukemen Ramen Sumida - Mackerel Ramen

Shinjiko Shijimi Chūkasoba Kohaku was one of the best ramen shops on my list during my last trip. Definitely gonna try more shellfish based ramen.
As mentioned in the other comment, there are lots of shellfish based ramen these days in Tokyo and surrounding area.

I love clam chowder and I love ramen so naturally clam ramen is intriguing. Do you know of anything similar in the Tokyo area?
If you check my Tsuta video, they actually had clam chowder tsukemen on their menu in the past! Maybe still do, haven't checked recently. There's quite a bunch of good clam ramen in Tokyo nowadays. Kohaku, Mugi to Olive, Konjiki Hototogisu, Ramen Kai - just to mention a few.

I am fascinated with Tantanmen! So far I only got to taste my own versions and some variations in Düsseldorf, Germany but i'm definitely gonna try that restaurant the next time I'm in Japan. Hopefully it's not too light on the szechuan peppers :D

Haha well I tried! Really wanted to show that condensed soup. Kanagawa has A TON of good ramen. Go for tonkotsu and you’re golden. Torakichiya, Sugitaya, Ramen Jiro Kannai, Sumire, Suehiroya
